While Penfolds is historically famous for its monumental red wines, the house undertook a white wine revolution in the late 20th century to create a white counterpart to Grange. This movement focused heavily on cool-climate Chardonnay, primarily sourced from the high-altitude, chilly slopes of the Adelaide Hills in South Australia. Penfolds' premium Chardonnay style, exemplified by their Reserve Bin A, represents a sophisticated, contemporary approach to the varietal. The winemaking involves hand-harvesting, whole-bunch pressing, and wild fermentation in French oak barriques. Regular lees stirring (battonage) and controlled malolactic fermentation impart a rich, creamy texture and complex nutty, nougat-like characters, balanced by a striking natural acidity and a distinctive, flinty mineral finish.
