The Penfolds Cellar Reserve Mataro is a testament to the winery's spirit of experimentation and its reverence for South Australia's viticultural heritage. While Mataro (also known as Mourvèdre) was historically relegated to fortified wines or GSM blends, Penfolds' winemakers sought to elevate this unsung hero into a single-varietal masterpiece under the Cellar Reserve label. Sourced primarily from ancient, dry-grown vineyards in the Barossa Valley, this wine highlights the grape's unique rustic complexity. It is typically fermented in open fermenters and matured in seasoned French oak hogsheads to allow the natural, earthy, and spicy characteristics of the fruit to shine through without being overshadowed by heavy wood influence.

Penfolds blev grundlagt i 1844 af dr. Christopher Rawson Penfold og hans hustru Mary på Magill Estate i South Australia og er i dag et af Australiens ældste og mest ikoniske vinhuse. Ejendommen opnåede legendarisk international anerkendelse i 1950'erne under den visionære chefvinmager Max Schubert, som skabte Penfolds Grange og revolutionerede landets vinfremstilling. Drevet af en berømt filosofi om at blande på tværs af regioner og druesorter udvælger Penfolds enestående druer fra historiske australske terroirs – herunder Barossa Valley, McLaren Vale og Coonawarra – samt fra udvalgte internationale topområder. Vinhuset er verdenskendt for kraftfulde, upåklageligt strukturerede og særdeles lagringsværdige vine anført af flagskibet Grange, Bin 707 Cabernet Sauvignon og den berømmede Bin-serie.
