The fruit is entirely hand-picked and whole-bunch pressed directly into French oak barriques for wild yeast fermentation. It undergoes complete malolactic fermentation and extensive lees stirring (battonage), resulting in a sophisticated, highly textured white wine that beautifully balances vibrant natural acidity with complex notes of toasted hazelnut, white stone fruit, and nougat.
