Under the traditional canteiro system, the wine is aged in seasoned oak casks in warm attics, undergoing a slow, gentle oxidation that concentrates its sugars, acids, and complex aromatics. This process yields a dark, mahogany-hued nectar with an intense bouquet of dried fruits, warm spices, toffee, and a distinct smoky complexity.
