Sercial is the high-wire act of Madeira, renowned for its bracing, electric acidity and bone-dry profile. Locally nicknamed 'Esgana Cão' (the dog strangler) because of its sharp, astringent nature in youth, Sercial undergoes a magical transformation through the traditional canteiro aging system. At Pereira D'Oliveira, these wines are left to sleep in seasoned oak casks in warm attics, slowly concentrating through evaporation over a minimum of twenty years—and often much longer. This slow oxidative baking coaxes out complex notes of dried citrus peel, walnuts, saline minerals, and iodine. The volcanic soils of Madeira's steep terraced vineyards impart a distinct smoky, flinty undertone, resulting in a Frasqueira of unmatched tension, energy, and historical depth.
