The name, translating to 'The King's Folly,' pays homage to the legendary banquets of French royalty where sweet Gascon wines were highly prized. This allows the grapes to undergo passerillage (shriveling on the vine), concentrating their natural sugars while preserving a vibrant, spine-tingling acidity.
