Historically known as the 'Extra Cuvée de Réserve', this signature non-vintage Champagne represents the definitive house style of Pol Roger. It is crafted from an equal blend of Pinot Noir, Pinot Meunier, and Chardonnay sourced from approximately 30 different crus across the Champagne region. The wine undergoes its secondary fermentation and extensive aging in Pol Roger's legendary chalk cellars in Épernay, which lie 30 meters below ground and are kept at a remarkably cool 9°C. This exceptionally cold environment slows down the fermentation process, encouraging the development of incredibly fine bubbles and a complex, creamy mousse. True to the house's artisanal heritage, every bottle is still hand-riddled by professional riddlers before disgorgement. The result is a beautifully balanced Champagne that marries the structure of Pinot Noir with the fleshy fruitiness of Pinot Meunier and the floral elegance of Chardonnay, a style famously championed by Sir Winston Churchill.
