This Fine Champagne bottling, prepared in 1989, represents a prestigious blend of eaux-de-vie sourced exclusively from the two finest crus of the Cognac region: Grande Champagne and Petite Champagne, with at least 50% coming from the former. The unique terroir of these crus is defined by soft, chalky soils that force the roots of the Ugni Blanc grapes deep into the earth, yielding wines of high acidity and low alcohol—perfect for distillation. Double-distilled on the lees in traditional small copper Charentais stills, the spirit was then aged in toasted Limousin oak casks, which imparted rich notes of vanilla, dried stone fruits, warm spices, and a subtle floral rancio.
