Historically, the wines of Rorschwihr were so highly prized that they were protected by special local decrees in the Middle Ages, favored by regional royalty and monasteries alike. Pierre Gassmann continues this legacy with a patient, non-interventionist approach, allowing the grapes to achieve optimal ripeness—often with a touch of noble rot—before a slow fermentation using indigenous yeasts. The wine is then matured in the estate's labyrinthine cellars for several years before release. This results in a Gewurztraminer of singular complexity, boasting an opulent texture, vibrant notes of lychee, ginger, and exotic spices, balanced by a deep, stony minerality.
