The cuvée "Jadis," translating to "of yesteryear" or "formerly" in French, is a masterful nod to the historical winemaking traditions of Burgundy. Crafted by the historic family estate of Roux Père et Fils, this wine is typically produced from Bourgogne Aligoté, showcasing a grape variety that was historically revered alongside Chardonnay. Rather than the modern, high-acid, stainless-steel style often associated with Aligoté, the "Jadis" cuvée is fermented and aged in oak barrels, reviving the ancient Burgundian practice. This traditional approach coaxes out a rich, textured profile with subtle spice, toasted notes, and a beautifully rounded mouthfeel, while preserving the grape's signature vibrant acidity. It represents a bridge to the past, honoring the terroir of Burgundy's lesser-known historical treasures with meticulous craftsmanship.

Domaine Roux Père et Fils blev grundlagt i 1885 af Louis Fernand Roux i Côte de Beaune-landsbyen Saint-Aubin og har gennem fem generationer udviklet sig til et af Bourgognes mest betydningsfulde familieejede vinhuse. I dag ledes domænet af brødrene Mathieu og Sébastien Roux, som råder over mere end 70 hektar egne vinmarker fordelt på over 120 lieux-dits på tværs af Côte de Nuits, Côte de Beaune og Côte Chalonnaise. Markarbejdet bygger på bæredygtige principper (lutte raisonnée) på overvejende syd- og sydøstvendte skråninger rige på kalksten og mergel. I kælderen sikrer en parcelleret vinificering fuldkommen terroirtroskab, hvor klassisk lagring på franske egetræsfade harmonisk kombineres med moderne modning på ståltanke og terrakotta-amforaer for at bevare frugtens renhed, friskhed og ranke mineralitet. Blandt husets ikoniske vine finder man den mineralske Saint-Aubin Premier Cru Les Cortons, Puligny-Montrachet Les Enseignères, Corton-Charlemagne Grand Cru samt velstrukturerede pejlemærker som Les Murelles og Côte de Nuits-Villages Pinot Noir.
