The cuvée "Jadis," translating to "of yesteryear" or "formerly" in French, is a masterful nod to the historical winemaking traditions of Burgundy. Crafted by the historic family estate of Roux Père et Fils, this wine is typically produced from Bourgogne Aligoté, showcasing a grape variety that was historically revered alongside Chardonnay. Rather than the modern, high-acid, stainless-steel style often associated with Aligoté, the "Jadis" cuvée is fermented and aged in oak barrels, reviving the ancient Burgundian practice. This traditional approach coaxes out a rich, textured profile with subtle spice, toasted notes, and a beautifully rounded mouthfeel, while preserving the grape's signature vibrant acidity. Domaine Roux Père et Fils blev grundlagt i 1855 af Louis Roux i den historiske landsby Saint-Aubin og har gennem fem generationer udviklet sig til en af Bourgognes mest anerkendte familieejendomme. I dag råder familien over et imponerende kludetæppe af førsteklasses vinmarker fordelt over Côte de Beaune, Côte de Nuits og Côte Chalonnaise.
