Hailing from the precipitous, sun-drenched slopes of the Zeltinger Schlossberg, this dry Riesling represents a masterful intersection of late-harvest ripeness and mineral precision. The vineyard itself, named after the ancient castle ruins that watch over the Mosel River, is characterized by its deep, heat-retaining blue Devonian slate soils. Selbach-Oster hand-harvests these grapes at Spätlese-level maturity, allowing the fruit to develop rich, complex aromatics before fermenting it dry (Trocken) using ambient yeasts. The wine is aged in traditional, large oak Fuder casks, which gently micro-oxygenate the wine without imparting oak flavors, preserving the pristine, crystalline character of the Riesling grape.
