The Spier 21 Gables Cabernet Sauvignon is a premium red wine sourced from select vineyards in the Stellenbosch region of South Africa's Coastal Region. The terroir is characterized by decomposed granite and sandstone soils, influenced by cooling maritime breezes from False Bay. This wine is typically produced as a 100% Cabernet Sauvignon. Standard vinification involves fermentation in stainless steel tanks followed by aging in French oak barrels, typically for 18 to 24 months with a significant proportion of new oak. The resulting style is structured and full-bodied, showcasing dark fruit characteristics, herbal undertones, and integrated oak influence.
