The wine is named in honor of the historic Cape Dutch gables on the Spier estate. It is typically crafted from dryland vineyards, which yield concentrated fruit. Fermentation generally takes place in stainless steel or open-top fermenters, followed by maturation in a combination of new and seasoned French, American, and Hungarian oak barrels for approximately 18 to 20 months.
