Veronia Appassimento is a contemporary expression of Sicilian winemaking, crafted under the flexible Terre Siciliane IGT designation. This red wine employs the traditional appassimento technique, more famously associated with northern Italy, adapting it to the sun-drenched Mediterranean climate of Sicily. By allowing the grapes to partially dry—either on the vine or on specialized racks—the water content evaporates, concentrating the sugars, acids, and aromatic compounds. This process yields a deeply colored, full-bodied red wine characterized by intense aromas of ripe blackberries, dried plums, and sweet baking spices, backed by a round, velvety texture.
