Clos Ste Hune is a legendary 1.67-hectare monopole vineyard within the Rosacker Grand Cru in Hunawihr, held by the Trimbach family for over two hundred years. While Clos Ste Hune is globally renowned for its bone-dry, mineral-driven style, in exceptional years favored by botrytis, Trimbach crafts an incredibly rare Vendanges Tardives (late harvest). The 'Hors Choix' (meaning 'beyond choice') designation is reserved exclusively for the most extraordinary vintages where concentration, acidity, and noble rot reach mythical proportions. This rare nectar marries the intense, honeyed richness of late-harvest fruit with the razor-sharp, limestone-driven acidity and deep petrol-mineral complexity that defines this sacred plot of land. It is widely considered one of the most collectible and profound sweet wines on earth.

Maison Trimbach blev grundlagt i Riquewihr i 1626 og flyttede senere til Ribeauvillé. Huset rummer i dag tretten generationers urokkelige dedikation til det alsaciske vinbrug. Ejendommen råder over mere end 60 hektar førsteklasses terroir langs forkastningszonen ved Ribeauvillé, særligt i kommunerne Ribeauvillé, Bergheim og Hunawihr. Her mødes en kompleks undergrund af muslingekalk, mergel og sandsten med et beskyttet, halvkontinentalt mikroklima. Efter årtiers bæredygtig dyrkning opnåede Trimbach i 2023 officiel økologisk certificering for samtlige egne vinmarker samt de tilknyttede faste avleres parceller. Vinifikationsfilosofien bygger på en kompromisløs stræben efter balance, nerve og en rank, gastronomisk tørhed. Druerne presses nænsomt, hvorefter mosten gærer parcellært under temperaturstyring på ståltanke og neutrale fade. Den malolaktiske gæring blokeres konsekvent, og vinene modnes tålmodigt på flaske før frigivelse. Huset er verdensberømt for sin krystalklare struktur og fænomenale lagringspotentiale. Ikonerne tæller blandt andet den monumentale enkeltmarks-Riesling Clos Sainte Hune fra Rosacker-parcellen, den legendariske Cuvée Frédéric Emile samt præcist skulpterede Grand Cru-vine fra marker som Mandelberg og Schlossberg.
