Crafted using the traditional method (Flaschengärung), this sparkling wine is sourced from steep-slope Saar vineyards characterized by weathered Devonian slate. The base wine undergoes spontaneous fermentation with indigenous yeasts before secondary fermentation in the bottle, followed by extensive aging on its lees in the estate's historic cellars. Located in the historic viticultural commune of Wiltingen along the Saar River, Van Volxem traces its heritage back to a Roman estate and later a Jesuit monastery before being acquired and revitalized by Roman Niewodniczanski in 1999.
