The 'Grand Élevage' from Maison Verget is a masterclass in the art of 'élevage'—the critical aging phase where a wine truly finds its soul. Created by the iconoclastic Jean-Marie Guffens, this cuvée is crafted from 100% Chardonnay sourced from prime, high-altitude vineyards across the Mâconnais. Guffens, famous for challenging Burgundy's rigid hierarchies, designed this wine to prove that meticulous lees contact and precise aging could elevate Mâconnais fruit to rival the prestigious white Burgundies of the Côte d'Or. Vinified with minimal intervention and aged on its fine lees in a combination of stainless steel and concrete vats, the wine avoids heavy oak influence, allowing the pure, mineral-driven character of the limestone soils to shine. It is celebrated for its remarkable tension, vibrant citrus aromas, and a rich, textured mouthfeel that reflects its namesake aging process.
