Sourced from the historic estate of Château d'Ollwiller, one of the very few castles in Alsace authorized to produce wine under its own estate name, this Crémant d'Alsace carries centuries of heritage. The estate's history dates back to the 13th century when it was first established by Cistercian monks, later passing to noble families before being tragically destroyed during the fierce World War I battles at nearby Hartmannswillerkopf. Rebuilt in the decades that followed, the castle's surrounding vineyards benefit from a unique microclimate sheltered by the Vosges Mountains, resting on rich clay-silt and stony soils. This sparkling wine is crafted according to the traditional method, undergoing a secondary fermentation in the bottle and aging on its lees to develop a delicate effervescence, balanced acidity, and a refined bouquet of white flowers and fresh orchard fruits.
