The Klosterlay vineyard, situated on the lower slopes of Rüdesheim with soils rich in quartzite and slate, benefits from the moderating influence of the Rhine River, yet requires freezing temperatures of at least minus seven degrees Celsius to freeze the grapes on the vine. Harvested by hand in the freezing pre-dawn hours, the grapes are pressed while still frozen to separate the highly concentrated, sugary nectar from the water ice. This traditional, labor-intensive method yields a luscious dessert wine with vibrant acidity, balancing intense sweetness with remarkable freshness.
