The story of Mizunara oak (Quercus mongolica) began out of necessity during World War II when import restrictions cut off access to American white oak and Spanish sherry casks. Yamazaki's master blenders turned to this indigenous, highly porous, and notoriously difficult-to-work-with wood. They discovered that while young Mizunara-aged spirit can be harsh, extensive maturation yields an ethereal, deeply complex profile. Established in 1923 by Suntory founder Shinjiro Torii, the Yamazaki Distillery stands at the foot of Mount Tennozan in Shimamoto, Osaka, as Japan's pioneering commercial malt whisky distillery. Situated where the Katsura, Uji, and Kizu rivers converge, the site was specifically selected for its exceptionally soft, pristine water and misty, humid microclimate that provides optimal conditions for barrel maturation.
