Crafted by Domaine Long-Depaquit, Albert Bichot's historic estate in Chablis, this Premier Cru comes from 'Les Beugnons', a highly regarded sub-climat of the larger Vaillons vineyard. Located on the left bank of the Serein River, this parcel enjoys a warm south/south-westerly exposure that coaxes ripe, expressive fruit flavors from the vines while maintaining the classic Chablis nerve. The name 'Beugnons' is derived from an old local word for springs or fountains, hinting at the water-rich subsoils of the area. The terroir here is defined by Kimmeridgian limestone soils packed with fossilized prehistoric oyster shells, which imbues the wine with its signature flinty, saline minerality. To preserve the absolute purity of the fruit and the distinct expression of the soil, the wine is primarily fermented and aged in stainless steel tanks, with only a small portion occasionally resting in seasoned oak barrels to enhance its elegant texture.
