Crafted by the historic house of Albert Bichot, founded in Beaune in 1831, the 'Vieilles Vignes' (Old Vines) Pinot Noir represents a masterful expression of Burgundy's regional terroir. Sourced from selected plots across the Côte de Beaune and Côte de Nuits, the vines for this cuvée average 25 to 35 years of age. These deeper root systems draw rich mineral complexity from the classic limestone and clay soils, yielding smaller, more concentrated berries. The vinification balances tradition and modernity, utilizing temperature-controlled stainless steel vats to preserve the vibrant red fruit character, alongside partial aging in French oak barrels for 8 to 12 months to lend subtle structure, silky tannins, and a touch of spice. This wine pays homage to the centuries of Benedictine and Cistercian viticultural heritage that defined the climats of Burgundy.
