Crafted by the historic house of Albert Bichot, founded in Beaune in 1831, the 'Vieilles Vignes' (Old Vines) Pinot Noir represents a masterful expression of Burgundy's regional terroir. Sourced from selected plots across the Côte de Beaune and Côte de Nuits, the vines for this cuvée average 25 to 35 years of age. These deeper root systems draw rich mineral complexity from the classic limestone and clay soils, yielding smaller, more concentrated berries. The vinification balances tradition and modernity, utilizing temperature-controlled stainless steel vats to preserve the vibrant red fruit character, alongside partial aging in French oak barrels for 8 to 12 months to lend subtle structure, silky tannins, and a touch of spice. This wine pays homage to the centuries of Benedictine and Cistercian viticultural heritage that defined the climats of Burgundy.

Maison Albert Bichot blev grundlagt i Monthélie af Bernard Bichot i 1831 og flyttede til Beaune i 1912. Huset repræsenterer seks generationers stolt tradition for bourgognisk vinhus- og négocianthåndværk. Under Albéric Bichots visionære ledelse har familien opbygget en mosaik af seks selvstændige domæner, der samlet dækker over 100 hektar fra Chablis til Beaujolais: Domaine Long-Depaquit, Domaine du Clos Frantin, Château-Gris, Domaine du Pavillon, Domaine Adélie og Domaine de Rochegrès. Ejendommens parceller i Côte de Nuits, Côte de Beaune og Côte Chalonnaise er Ecocert-certificeret økologiske, og driften er præget af kompromisløs skånsomhed over for jordbunden samt skræddersyet markarbejde tilpasset det enkelte terroir. Vinifikationen bygger på en minimalistisk tilgang med nænsom tyngdekraftsføring i kælderen, spontangæring med den naturlige gær og en diskret fadlagring, der nænsomt fremhæver hvert terroirs særpræg. Huset er berømt for sine referencevine, heriblandt den ikoniske Chablis Grand Cru Monopole La Moutonne, storslåede Grand Cru-aftapninger fra Chambertin og Clos de Vougeot samt sin historiske status som en af de mest fremtrædende opkøbere ved de prestigefyldte auktioner på Hospices de Beaune.
