Hailing from the historic hills of Valpolicella, Allegrini's Grappa di Amarone represents the noble transformation of a rustic Italian tradition into a spirit of sublime elegance. Grappa was historically born from the thrifty spirit of Italian farmers who refused to let any part of the harvest go to waste. Today, Allegrini crafts this exquisite distillate from the precious pomace of Corvina, Rondinella, and Oseleta grapes left behind after the production of their legendary Amarone della Valpolicella. Because these grapes undergo the painstaking 'appassimento' air-drying process for several months, their skins are incredibly concentrated with sugars, aromatic compounds, and essential oils. Following careful distillation in copper alembics, the spirit is aged in oak casks, which tempers its fiery youth and imparts a rich amber hue alongside warm notes of dried cherries, dark chocolate, vanilla, and toasted wood.
