Nestled in the foothills of Fumane di Valpolicella, the Palazzo della Torre vineyard surrounds the historic Renaissance villa of the same name, a place steeped in Venetian history. Crafted by the pioneering Allegrini family, this wine is a masterclass in innovative Veronese winemaking. It is produced using a unique double-fermentation technique: the majority of the Corvina, Rondinella, and Sangiovese grapes are vinified fresh at harvest, while a portion is set aside to undergo 'appassimento'—drying naturally for several months. In December, the fresh wine is refermented with these semi-dried grapes, marrying the vibrant, cherry-driven acidity of Valpolicella with the rich, velvety depth, raisiny complexity, and structure typically reserved for Amarone.
