Cervaro della Sala is a white wine produced by Marchesi Antinori at their Castello della Sala estate in Umbria, Italy. The wine is typically a blend of approximately 85% to 90% Chardonnay and 10% to 15% Grechetto. The vineyards are situated at elevations between 220 and 470 meters on soils composed of calcareous clay and marine fossils. The Chardonnay grapes undergo skin contact maceration followed by fermentation and aging in French oak barriques, where malolactic fermentation also occurs. The Grechetto is fermented and aged in stainless steel tanks. The components are then blended and aged in the bottle before release, resulting in a structured, age-worthy white wine.
