✨ Technical Specifications
Aramasa's 'Colors' series is an avant-garde homage to the agricultural heritage of Akita Prefecture, with each release showcasing a specific local heirloom rice variety. The 'Cosmos' bottling, named after the autumn cherry blossom, is dedicated to the Akita Sake Komachi rice strain. In its rare 'Spark' incarnation, this sake undergoes a natural secondary fermentation in the bottle to create a delicate, persistent effervescence. True to Aramasa's strict brewing philosophy, it is crafted using the traditional Kimoto starter method, brewed in wooden casks (kioke), and fermented exclusively with the historic Kyokai No. 6 yeast, which was originally isolated at the Aramasa brewery in 1930. The result is a highly sophisticated sparkling sake that marries vibrant, wine-like lactic acidity with the gentle sweetness of Akita Sake Komachi, all elevated by a fine, refreshing mousse.
🍾 About the Producer
Founded in 1852 in Akita Prefecture, Japan, Aramasa Shuzo is one of the sake world's most revolutionary and revered historic breweries. Under the avant-garde leadership of eighth-generation owner Yusuke Sato, the kura strictly champions traditional, natural brewing methodologies, utilizing only native Akita rice cultivars, wooden fermentation vats (kioke), and the time-honored kimoto method without additives. Aramasa is famously the historic birthplace of Kyokai Yeast No. 6, isolated here in 1930, which the brewery now uses exclusively across its entire production. Renowned for vibrant acidity, exceptional clarity, and wine-like complexity, Aramasa produces iconic cult expressions including the unpasteurized No. 6 series, the terroir-focused Colors collection, and the rare, boundary-pushing Private Lab series featuring labels like Invisible Pink Unicorn.
