Aramasa's 'Colors' series is an avant-garde homage to the agricultural heritage of Akita Prefecture, with each release showcasing a specific local heirloom rice variety. The 'Cosmos' bottling, named after the autumn cherry blossom, is dedicated to the Akita Sake Komachi rice strain. In its rare 'Spark' incarnation, this sake undergoes a natural secondary fermentation in the bottle to create a delicate, persistent effervescence. True to Aramasa's strict brewing philosophy, it is crafted using the traditional Kimoto starter method, brewed in wooden casks (kioke), and fermented exclusively with the historic Kyokai No. 6 yeast, which was originally isolated at the Aramasa brewery in 1930.
