Averys, operating from their historic vaulted cellars, selected and imported outstanding casks of Sherry directly from Jerez to bottle under their own curated labels, such as the Elizabetha Fino. This dry, pale Sherry is crafted in the traditional solera system, where it undergoes biological aging under a delicate, protective veil of indigenous yeast known as 'flor'. This natural blanket prevents oxidation while imparting the wine with its signature bone-dry profile, vibrant salinity, and complex notes of fresh dough, green apple, and wild herbs.
