Averys of Bristol, with over two centuries of merchant heritage, has long excelled at sourcing exceptional wines that represent the quintessential character of their regions. For their Signature Prosecco, they turned to the picturesque, sun-drenched hills of Veneto in northeastern Italy. Crafted from the native Glera grape, this sparkling white wine is produced using the Charmat method in stainless steel autoclaves, which beautifully preserves the grape's delicate, primary aromatics. The terroir of the region—characterized by mineral-rich clay-limestone soils and a climate moderated by both the Adriatic Sea and the nearby Alps—imparts a vibrant acidity and crisp freshness to the wine, making it a classic representation of Italian sparkling elegance curated by a historic British merchant.

Averys blev grundlagt i Bristol i 1793 og er en af Storbritanniens ældste og mest traditionsrige uafhængige vinhandlere og négociant-huse. Gennem det 20. århundrede opbyggede firmaet et internationalt ry som en fremsynet og nyskabende pioner, anført af Ronald Avery og sidenhen hans søn John Avery MW. Averys var blandt de allerførste britiske vinhandlere, der fik øjnene op for Bordeaux' højre bred – herunder introduktionen af Château Pétrus på det britiske marked – ligesom huset tidligt brød ny grund ved at importere banebrydende vine fra den nye verden, særligt Californien og Australien. Som négociant-udvælger arbejder Averys tæt sammen med familieejede domæner i klassiske europæiske appellationer som Champagne, Bourgogne, Loire, Pfalz og Rioja.
