Bacalhôa was a true pioneer in the Península de Setúbal when they introduced Chardonnay to the region in the early 1980s. Planted in the cooler microclimate of the Serra da Arrábida slopes—specifically within the famed Cova da Ursa vineyard—the vines benefit from clay-limestone soils and refreshing Atlantic breezes. This unique terroir prevents the grapes from over-ripening, preserving a vibrant natural acidity that balances the variety's inherent richness. Traditionally fermented and matured in French oak barrels with regular battonage (lees stirring), this wine beautifully marries ripe tropical and citrus fruit notes with elegant toasted brioche, vanilla, and buttery undertones.
