This dramatic climate allows the Sauvignon Blanc grapes, often including the highly aromatic Sauvignon Musque clone, to ripen slowly, retaining a vibrant, electric acidity alongside rich tropical and stone fruit flavors. Winemaker Morgan Twain-Peterson MW employs thoughtful, low-intervention cellar techniques, typically fermenting and aging the wine in a combination of neutral French oak barrels, concrete, and stainless steel.
