A playful and joyous creation from Bedrock Wine Co., 'Sh'Bubbles' is a sparkling rosé named in honor of winemaker Morgan Twain-Peterson's partner, Sarah, whose nickname 'Shub' inspired the moniker. This wine represents a whimsical yet serious approach to California sparkling wine, blending Bedrock's signature devotion to historic, old-vine vineyards with a vibrant, refreshing style. The blend typically draws from ancient California heritage varieties, often anchored by old-vine Carignan, Grenache, and Syrah, occasionally blended with aromatic white varieties like Pinot Gris or Riesling. To preserve the explosive fruit character and bright, mouthwatering acidity, the wine is crafted to emphasize freshness and immediate charm, resulting in a beautifully salmon-hued sparkling rosé filled with notes of wild strawberries, red currants, and citrus zest.

Bedrock Wine Co. blev grundlagt i Sonoma, Californien, i 2007 af vinmageren Morgan Twain-Peterson MW med en dedikeret mission om at genoprette og bevare statens historiske vinmarker med gamle vinstokke. Med udgangspunkt i den legendariske Bedrock Vineyard i Sonoma Valley – som oprindeligt blev tilplantet i midten af det 19. århundrede – hylder Twain-Peterson og hans partner Chris Cottrell Californiens vinarv gennem en minimalistisk og terroir-drevet vinifikation. Vingården skaber vitale og stedtypiske vine på klassiske, historiske field blends såvel som traditionelle druesorter som Zinfandel, Syrah, Cabernet Sauvignon og Chardonnay.
