While Vin Jaune legally requires six years and three months of aging under a veil of yeast (sous voile), S ephane and B n dicte Tissot push the boundaries of the Jura tradition by aging this 100% Savagnin cuv e for an astonishing twelve years in oak barrels without topping them up. Resting undisturbed in their historic cellars in Montigny-les-Arsures, the wine undergoes a slow, deliberate evaporation known as the 'angels' share,' which concentrates its flavors and allows the yeast veil to impart legendary complexity. The result is a profound, golden nectar boasting intense aromas of walnuts, curry spices, fenugreek, and preserved citrus, balanced by the piercing, mineral-driven acidity characteristic of Jura's ancient lias clay and blue marl soils.

Domaine Tissot blev grundlagt i Montigny-lès-Arsures i 1962 af André og Mireille Tissot, men gennemgik en skelsættende forvandling, da Stéphane og Bénédicte Tissot overtog tøjlerne i 1990. Parret har haft en afgørende rolle i at bringe Juras vine op i den absolutte verdenselite. De udfasede al syntetisk kemi, opnåede økologisk certificering i 1999 og fuld biodynamisk Demeter-certificering i 2004 for ejendommens cirka 35-50 hektar. Domænet råder over fremragende mikroklimaer og parceller som Les Bruyères, La Mailloche, En Barberon og Curon, der er præget af det kontinentale bjerglignende klima samt en kompleks jordbund af jurakalk og karakteristiske blå, grå og røde mergellag.
