✨ wine.spec_sheet

An extraordinary, ultra-aged oxidative masterpiece, this cuve represents the pinnacle of patience and traditional Jura winemaking. While Vin Jaune legally requires six years and three months of aging under a veil of yeast (sous voile), Sephane and Bndicte Tissot push the boundaries of the Jura tradition by aging this 100% Savagnin cuve for an astonishing twelve years in oak barrels without topping them up. Resting undisturbed in their historic cellars in Montigny-les-Arsures, the wine undergoes a slow, deliberate evaporation known as the 'angels' share,' which concentrates its flavors and allows the yeast veil to impart legendary complexity. The result is a profound, golden nectar boasting intense aromas of walnuts, curry spices, fenugreek, and preserved citrus, balanced by the piercing, mineral-driven acidity characteristic of Jura's ancient lias clay and blue marl soils.

Renowned for their uncompromising commitment to terroir, they practice meticulous parcel-by-parcel vinification using minimal sulfur and indigenous yeasts to craft highly expressive, mineral-driven wines.
