Stéphane Tissot's 'BBF' (Blanc de Blancs Fût) is a revolutionary take on Crémant du Jura, challenging the traditional boundaries of sparkling wine. The name itself reveals its unique upbringing: 'Blanc de Blancs Elevé en Fût' (White of Whites aged in oak barrels). Unlike typical Crémants that prioritize fresh, primary fruit, Tissot treats this sparkling wine with the same reverence as his top still Chardonnays. The base wine is fermented and aged in oak barrels for up to a year, allowing it to develop a rich, oxidative-tinged complexity and structural depth before undergoing secondary fermentation in the bottle. It then spends an extended period, often exceeding four years, resting on its lees. This meticulous process yields a sparkling wine of profound vinous character, marrying the vibrant, mineral-driven acidity of Jura's clay and limestone terroirs with luxurious notes of toasted brioche, hazelnut, and baked orchard fruits. It stands as a testament to the Tissot family's pioneering spirit and their dedication to elevating Jura sparkling wines to the level of fine Champagne.

Established in 1962 by André and Mireille Tissot and taken over by their son Stéphane alongside his wife Bénédicte in 1990, Domaine Bénédicte & Stéphane Tissot is an iconic benchmark of the Jura region, located in the village of Montigny-lès-Arsures near Arbois, France. A relentless pioneer of organic and biodynamic viticulture, Stéphane transitioned the estate to biodynamics in the early 2000s, championing minimal-intervention cellar techniques and native yeast fermentations to reveal hyper-specific terroirs.
