Grown on distinct Triassic clay soils, the Savagnin grapes benefit from Stéphane Tissot's meticulous biodynamic farming. Following fermentation, the wine undergoes the legendary 'sous voile' aging process, resting undisturbed in oak barrels for over six years under a delicate veil of flor yeast without any topping up. This slow, controlled oxidation develops its signature complex character. Local lore attributes the discovery of Vin Jaune to a forgotten barrel in a cellar, which transformed into liquid gold. Established in 1962 by André and Mireille Tissot and taken over by their son Stéphane alongside his wife Bénédicte in 1990, Domaine Bénédicte & Stéphane Tissot is an iconic benchmark of the Jura region, located in the village of Montigny-lès-Arsures near Arbois, France. A relentless pioneer of organic and biodynamic viticulture, Stéphane transitioned the estate to biodynamics in the early 2000s, championing minimal-intervention cellar techniques and native yeast fermentations to reveal hyper-specific terroirs.
