In the heart of the Jura, Bénédicte and Stéphane Tissot craft a rosé that is far from ordinary, reflecting the region's wild beauty and unique geological heritage. Sourced from biodynamically farmed vineyards in Montigny-les-Arsures, where clay and limestone scree dominate the landscape, this wine is a testament to minimal-intervention winemaking. Utilizing indigenous Jura varieties like Poulsard and Trousseau alongside Pinot Noir, the Tissots employ native yeast fermentation and minimal sulfur to preserve the raw energy of the fruit. The result is a gastronomic rosé of exceptional texture, showing a savory complexity, vibrant acidity, and a distinct mineral backbone that echoes the ancient marine soils of the Jura.

Domaine Tissot blev grundlagt i Montigny-lès-Arsures i 1962 af André og Mireille Tissot, men gennemgik en skelsættende forvandling, da Stéphane og Bénédicte Tissot overtog tøjlerne i 1990. Parret har haft en afgørende rolle i at bringe Juras vine op i den absolutte verdenselite. De udfasede al syntetisk kemi, opnåede økologisk certificering i 1999 og fuld biodynamisk Demeter-certificering i 2004 for ejendommens cirka 35-50 hektar. Domænet råder over fremragende mikroklimaer og parceller som Les Bruyères, La Mailloche, En Barberon og Curon, der er præget af det kontinentale bjerglignende klima samt en kompleks jordbund af jurakalk og karakteristiske blå, grå og røde mergellag. Stéphane er en passioneret fortaler for mikroskopisk parcelvinificering, hvor der arbejdes med den naturlige gær, lerkrukker, et absolut minimum af svovl og en uforfalsket respekt for terroirets særpræg.
