B n dicte and St phane Tissot's Cr mant du Jura 'Indig ne' is a revolutionary sparkling wine that redefines the traditional method through a strictly biodynamic lens. The name 'Indig ne' refers to the use of 100% indigenous yeasts for both fermentations. In a brilliant departure from standard sparkling winemaking, which relies on commercial yeasts and cane sugar for the secondary bottle fermentation, Tissot uses a small portion of actively fermenting must from his own Vin de Paille (straw wine) to kickstart the bubble creation. This technique ensures that every element of the wine originates from their own estate vineyards. Aged on its lees for up to three years, this cuv e offers a beautifully textured, mineral-driven profile that reflects the unique clay and limestone soils of the Jura.

Established in 1962 by André and Mireille Tissot and taken over by their son Stéphane alongside his wife Bénédicte in 1990, Domaine Bénédicte & Stéphane Tissot is an iconic benchmark of the Jura region, located in the village of Montigny-lès-Arsures near Arbois, France. A relentless pioneer of organic and biodynamic viticulture, Stéphane transitioned the estate to biodynamics in the early 2000s, championing minimal-intervention cellar techniques and native yeast fermentations to reveal hyper-specific terroirs. The domaine produces an extraordinary array of wines spanning profound single-vineyard Chardonnays from sites like Clos de la Tour de Curon and La Mailloche, energetic Savagnins, traditional sous-voile Vin Jaune, vibrant reds from indigenous Trousseau and Poulsard, and exceptional Crémant du Jura such as Indigène.
