The name 'Indig ne' refers to the use of 100% indigenous yeasts for both fermentations. In a brilliant departure from standard sparkling winemaking, which relies on commercial yeasts and cane sugar for the secondary bottle fermentation, Tissot uses a small portion of actively fermenting must from his own Vin de Paille (straw wine) to kickstart the bubble creation. This technique ensures that every element of the wine originates from their own estate vineyards.
