While appellation rules dictate a minimum of six years and three months of aging under a veil of yeast (sous voile) without topping up, Tissot allows this selection from the 'Les Bruyères' vineyard to rest in barrel for a full twelve years. Sourced from a distinct terroir of Lias clay, the Savagnin grapes develop profound concentration. Over more than a decade of slow evaporation and oxidative contact, the wine develops an unparalleled depth, offering a mesmerizing tapestry of walnuts, exotic curry spices, dried citrus peel, and intense mineral drive, preserved by the natural acidity of the site.

Established in 1962 by André and Mireille Tissot and taken over by their son Stéphane alongside his wife Bénédicte in 1990, Domaine Bénédicte & Stéphane Tissot is an iconic benchmark of the Jura region, located in the village of Montigny-lès-Arsures near Arbois, France. A relentless pioneer of organic and biodynamic viticulture, Stéphane transitioned the estate to biodynamics in the early 2000s, championing minimal-intervention cellar techniques and native yeast fermentations to reveal hyper-specific terroirs.
