Bénédicte and Stéphane Tissot's 'PMG'—an acronym for 'Pour Ma Gueule' (French slang for 'for my own throat,' traditionally reserved for the winemaker's private stash)—is a legendary, ultra-concentrated sweet wine from the Jura. Crafted only in exceptional vintages, this rare nectar is made from grapes dried for several months on straw mats (passerillage) to concentrate their sugars, acids, and flavors. The resulting must is so rich that fermentation is incredibly slow, often taking years in oak casks to reach its natural halt. The wine is celebrated for its breathtaking balance of luscious sweetness and vibrant, electric Jura acidity, offering complex aromas of candied citrus, dried apricots, honey, and exotic spices. Established in 1962 by André and Mireille Tissot and taken over by their son Stéphane alongside his wife Bénédicte in 1990, Domaine Bénédicte & Stéphane Tissot is an iconic benchmark of the Jura region, located in the village of Montigny-lès-Arsures near Arbois, France. A relentless pioneer of organic and biodynamic viticulture, Stéphane transitioned the estate to biodynamics in the early 2000s, championing minimal-intervention cellar techniques and native yeast fermentations to reveal hyper-specific terroirs. The domaine produces an extraordinary array of wines spanning profound single-vineyard Chardonnays from sites like Clos de la Tour de Curon and La Mailloche, energetic Savagnins, traditional sous-voile Vin Jaune, vibrant reds from indigenous Trousseau and Poulsard, and exceptional Crémant du Jura such as Indigène.
