Hailing from the historic clay and marl soils of Arbois in the Jura, Bénédicte and Stéphane Tissot's 'Sur Lias' is a masterful expression of Poulsard, the region's signature thin-skinned red grape. This cuvée is crafted with a deep respect for ancestral methods, undergoing fermentation with indigenous yeasts and aging on its fine lees ('sur lias') without any added sulfur. The result is an incredibly vibrant, pale-colored red wine that defies conventional expectations—often showing a translucent ruby hue akin to a dark rosé, yet bursting with wild strawberries, damp earth, and peppery spices. Tissot's commitment to biodynamic viticulture allows the delicate, temperamental Poulsard grape to express its purest, most energetic terroir-driven character.

Domaine Bénédicte & Stéphane Tissot er en ikonisk reference i Jura-regionen, beliggende i landsbyen Montigny-lès-Arsures nær Arbois. Ejendommen blev grundlagt i 1962 af André og Mireille Tissot og overtaget i 1990 af sønnen Stéphane og hans hustru Bénédicte. Som en kompromisløs pioner inden for økologisk og biodynamisk vinbrug omlagde Stéphane domænet til biodynamik i begyndelsen af 2000'erne. Med minimal intervention i kælderen og spontangæring med naturligt gær fremhæver han de enkelte markers helt unikke terroir. Domænet fremstiller en enestående vifte af vine, der spænder fra dybe enkeltmarks-Chardonnayer fra parceller som Clos de la Tour de Curon og La Mailloche over energiske Savagnin-vine og traditionel sous-voile Vin Jaune til levende rødvine på de lokale druer Trousseau og Poulsard samt fremragende Crémant du Jura som for eksempel Indigène. Vingårdens håndværksmæssige aftapninger hyldes for deres mineralske intensitet, renhed og spændstige nerve, og de har i høj grad været med til at løfte Juras anseelse på verdensplan.
