Hailing from the revered clay soils of Arbois, Bénédicte and Stéphane Tissot's Poulsard Vieilles Vignes is a masterclass in the preservation of Jura's indigenous viticultural heritage. Poulsard, an ancient thin-skinned grape variety, is notorious for its delicate, pale ruby hue that often mimics a deep rosé, yet it carries the soul and structure of a true red wine. Tissot sources this cuvée from ancient, deeply rooted vines that yield concentrated, highly expressive fruit. In the cellar, Stéphane embraces a minimalist philosophy, utilizing indigenous yeasts and often eschewing sulfur additions to allow the wild, rustic, and mineral-laden character of the terroir to shine. The result is a wine steeped in Jura folklore—a vibrant, ethereal nectar that whispers of forest floor, wild red berries, and the damp stone of the French alpine foothills.

Domaine Tissot blev grundlagt i Montigny-lès-Arsures i 1962 af André og Mireille Tissot, men gennemgik en skelsættende forvandling, da Stéphane og Bénédicte Tissot overtog tøjlerne i 1990. Parret har haft en afgørende rolle i at bringe Juras vine op i den absolutte verdenselite. De udfasede al syntetisk kemi, opnåede økologisk certificering i 1999 og fuld biodynamisk Demeter-certificering i 2004 for ejendommens cirka 35-50 hektar. Domænet råder over fremragende mikroklimaer og parceller som Les Bruyères, La Mailloche, En Barberon og Curon, der er præget af det kontinentale bjerglignende klima samt en kompleks jordbund af jurakalk og karakteristiske blå, grå og røde mergellag.
