✨ Technical Specifications
In the Jura region, where oxidative winemaking under a veil of yeast ('sous voile') historically defined the local style, Bénédicte and Stéphane Tissot became pioneers of the 'ouillé' (topped-up) method for Savagnin. By regularly topping up the barrels to prevent contact with oxygen, Tissot coaxes an entirely different expression from this ancient grape. Grown on the region's prized clay and blue marl soils, this wine undergoes spontaneous fermentation with indigenous yeasts and ages in oak. The result is a striking, non-oxidative masterpiece that highlights Savagnin's electric acidity, intense citrus profile, and profound saline minerality, bridging the gap between traditional Jura heritage and modern terroir-driven precision.
🍾 About the Producer
Established in 1962 by André and Mireille Tissot and taken over by their son Stéphane alongside his wife Bénédicte in 1990, Domaine Bénédicte & Stéphane Tissot is an iconic benchmark of the Jura region, located in the village of Montigny-lès-Arsures near Arbois, France. A relentless pioneer of organic and biodynamic viticulture, Stéphane transitioned the estate to biodynamics in the early 2000s, championing minimal-intervention cellar techniques and native yeast fermentations to reveal hyper-specific terroirs. The domaine produces an extraordinary array of wines spanning profound single-vineyard Chardonnays from sites like Clos de la Tour de Curon and La Mailloche, energetic Savagnins, traditional sous-voile Vin Jaune, vibrant reds from indigenous Trousseau and Poulsard, and exceptional Crémant du Jura such as Indigène. Celebrated for their mineral intensity, purity, and vibrant tension, the estate's artisanal bottlings have rightfully elevated the global reputation of Jura winemaking.
