Deeply rooted in the rugged terrain of the Jura, Bénédicte and Stéphane Tissot's Savagnin is a masterclass in traditional oxidative winemaking. Made from the ancient Savagnin grape, which is indigenous to these alpine foothills, this cuvée undergoes the historic 'sous voile' (under the veil) aging process. For up to 36 months, the wine rests in oak barrels without being topped up. A delicate, naturally occurring film of yeast forms on the surface, shielding the wine from excessive oxidation while slowly infusing it with its signature aromatic complexity of walnuts, spices, and dried fruits. Sourced from biodynamically farmed clay and limestone vineyards in Montigny-les-Arsures, this wine captures the wild, untamed spirit of the Jura, balancing intense mineral acidity with rich, oxidative depth.
