Spirale is a spectacular sweet passito-style nectar crafted by Stéphane and Bénédicte Tissot, representing a modern pinnacle of the Jura's ancient tradition of straw wines. The name 'Spirale' pays homage to both the spiral-shaped ammonite fossils abundant in the region's Jurassic limestone soils and the winding, transformative journey of the grapes as they dry. To create this cuvée, select bunches of Savagnin, Chardonnay, and Poulsard are meticulously hand-harvested and dried on straw mats or hung from rafters for several months. This natural dehydration process, known as passerillage, concentrates the sugars, acids, and flavors before a slow pressing and years of patient aging in oak casks. The result is an incredibly complex, amber-hued masterpiece that balances luscious sweetness with the Jura's signature electric acidity.
