Stéphane Tissot's 'Sursis' is a remarkable, single-vineyard Chardonnay born from a dramatic history. The name 'Sursis' translates to 'reprieve' or 'stay of execution,' paying homage to a parcel of vines that was scheduled to be uprooted. Recognizing the incredible potential of this steep, limestone-rich terroir, Stéphane intervened to save the plot. Cultivated biodynamically, the grapes are gently pressed and fermented with indigenous yeasts, then aged in oak barrels in the 'ouillé' (topped-up, non-oxidative) style. The resulting wine is a masterclass in tension and energy, showcasing the vibrant, mineral-driven side of Jura Chardonnay, marked by notes of citrus, white flowers, and a distinct, flinty reduction.
