Stéphane and Bénédicte Tissot’s Vin de Paille is a liquid testament to the ancient Jura tradition of straw wines. The process begins with selecting the finest bunches of Poulsard, Chardonnay, and Savagnin, which are then meticulously dried for several months on wicker screens or suspended in well-ventilated attics. This natural dehydration process, known as passerillage, concentrates the sugars, acids, and flavors within the grapes. Once pressed, the intensely sweet must undergoes an incredibly slow fermentation using indigenous yeasts, followed by years of patient aging in oak barrels. The resulting nectar is a complex, amber-hued masterpiece, offering rich aromas of dried apricots, honey, candied citrus, and exotic spices, balanced by the vibrant, mineral-driven acidity characteristic of Tissot's biodynamic Jura terroir.
