Crafted by the visionary Stéphane Tissot, this extraordinary Vin Jaune pushes the boundaries of traditional Jura winemaking. While appellation rules require Vin Jaune to be aged under a veil of yeast (la voile) for a minimum of six years and three months, Tissot extends this oxidative slumber to a staggering 99 months (over eight years) in un-topped oak barrels. Sourced from old-vine Savagnin grown on the region's prized blue and grey Lias marls, this extended aging coaxes out unparalleled depth.
