Cantine Nicosia's Bioperlage represents a modern, eco-conscious celebration of Sicilian viticulture, combining organic farming with vegan-friendly winemaking practices. Sourced from certified organic vineyards in Sicily where coastal breezes and sun-drenched soils allow native grapes like Grillo to thrive, this sparkling white wine is crafted using the Charmat method to preserve its bright, primary fruit aromas. The name Bioperlage playfully merges its organic certification with the fine, persistent bubbles that characterize the wine. It reflects the Nicosia family's dedication to preserving Sicily's rich biodiversity while delivering a vibrant, clean, and environmentally respectful expression of the island's coastal terroir.

Founded in 1898 by Francesco Nicosia, Cantine Nicosia is a historic family-owned winery located in Trecastagni on the eastern slopes of Mount Etna in Sicily, Italy. Today, under the stewardship of Carmelo Nicosia and his sons, the estate champions sustainable and organic viticulture across its high-altitude volcanic vineyards, particularly on the ancient Monte Gorna crater. The winery is highly renowned for its expressive Etna DOC wines crafted from indigenous varieties like Nerello Mascalese and Carricante, as well as its elegant Sosta Tre Santi Metodo Classico sparkling wines.
