Historically famous as the backbone of Marsala, Grillo has undergone a modern renaissance as a dry, aromatic table wine. Cultivated in vineyards that benefit from the intense Sicilian sun and cooling maritime breezes, the grapes are harvested at optimal ripeness to preserve their natural acidity. Cantine Nicosia er en historisk siciliansk vingård, grundlagt i 1898 af Francesco Nicosia og beliggende på Etnas østlige skråninger i Trecastagni. Gennem fem generationer i familiens eje har vinhuset etableret sig som en passioneret ambassadør for Siciliens vulkanske terroir og oprindelige druesorter – altid med fokus på certificeret økologisk vindyrkning og moderne, bæredygtig vinfremstilling.
